Gujarati Dal Dhokli is one of the most loved traditional Gujarati dishes. It is a wholesome combination of mildly sweet, tangy dal and soft wheat-flour dhokli pieces. This one-pot meal is perfect for a comforting lunch or dinner and tastes even better when served hot with a spoonful of ghee.

For the Dal

- 1 cup ROOTS Toor Dal
- 3 cups water
- 1 tomato, chopped
- 1 green chilli, chopped
- ½ teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 1 teaspoon cumin seeds
- ½ teaspoon mustard seeds
- 1 pinch asafoetida
- 1–2 teaspoons jaggery
- 1–2 teaspoons lemon juice
- Salt to taste
- Fresh coriander
- 1 tablespoon oil or ghee
For Dhokli
- 1 cup whole wheat flour
- ¼ teaspoon turmeric
- ½ teaspoon red chilli powder
- ½ teaspoon ajwain
- Salt to taste
- Water as required
👩🍳 How to Make Gujarati Dal Dhokli
Step 1: Cook the Dal
Wash the Toor Dal thoroughly and pressure cook it with water and turmeric until soft.
Once cooked, whisk the dal until smooth and keep it aside.
Step 2: Prepare the Dhokli Dough
Take wheat flour in a bowl and add turmeric, chilli powder, ajwain and salt.
Add water gradually and knead into a soft dough.
Cover and let it rest for around 10 minutes.
Step 3: Make the Dhokli
Roll the dough into a thin sheet and cut it into small diamond or square pieces.
Keep the pieces aside while you prepare the dal.
Step 4: Prepare the Dal
Heat oil or ghee in a deep pan.
Add mustard seeds and cumin seeds. Once they start crackling, add asafoetida, green chilli and tomato.
Add the cooked dal along with some water.
Add salt, red chilli powder and jaggery. Let the dal simmer for a few minutes.
Step 5: Add Dhokli
Bring the dal to a gentle boil.
Slowly add the dhokli pieces one by one while stirring gently so they don’t stick together.
Cook for approximately 10–15 minutes, or until the dhokli becomes soft and fully cooked.
Finally, add lemon juice and fresh coriander.
